If you know me then you know I love pickled foods and these pickled red onions are no exception! I make a jar every couple of weeks because we go through them so fast! We love them on grilled chicken tacos, salads, sandwiches, gyros and even breakfast burritos! Can’t get enough! They are so easy to make you probably don’t even need this recipe. Just make sure you have a 34 oz or larger jar. I love the Kilner brand jars. These will keep up to 2-3 weeks in the fridge. I recommend waiting to eat them for 2-3 days but if you’re in a hurry they’ll be ok after soaking a few hours. I hope you find this recipe to be easy and a keeper!
Easy Pickled Red Onion
- 1 large red onion (thinly sliced)
- 1 cup apple cider vinegar
- 2 tbsp white sugar
- 3 tsp kosher salt
- 2 cups cold water
Whisk apple cider vinegar, salt and sugar in 2 cups of water until sugar and salt dissolve.
Place thinly sliced onion in jar.
Pour vinegar mixture over onion.
Let sit at room temperature for 1 hour.
Cover and refridgerate for up to 2 weeks.
